The Citron is a large fragrant citrus fruit with a thick rind (white layer under the colored peel). It is said to resemble a ‘huge, rough lemon’. It is one of the original citrus fruits from which all other citrus types developed through natural or artificial hybridization (cross breeding). Though citron cultivars take on a wide variety of physical forms, they are all closely related genetically. It is used in Asian cuisine, traditional medicines, perfume (Often labeled as “oil of cedrate“), and religious rituals and offerings of Jewish, Hindu and Bhuddist. Hybrids of citrons with other citrus are commercially more prominent, notably lemons and many limes.

Citron has been a round a long time. How long? It was cultivated in Sumer (Sumerians) in the 3rd millennium BC is depicted on the walls of the Temple of Karnak and was used during Embalming of Mummies in Ancient Egypt. It has also be referenced in Jewish Religious practices as The Feast of the Tabernacles (Sukkot). Pliny The Elder mentioned it in his Natural History Book. It was used to freshen the breath and as an ancient alternative to Cedar wood in keeping clothes form being moth ridden.

Its often used in cooking in dishes from Asian traditions, although it is often used as a Spoon Sweet/ Sweet Preserves in and around the Mediterraian and Russia as a Hospitality Gesture.
